Coconut Chicken Masala

The love of nice food continues to lead me into producing magical dishes. Am so proud of myself. Arriving home yesterday and seeing the wifey was not around led me into trying this nice dish called Coconut Chicken Masala. Little did the wifey know how she would shape my dinner plans when she left the 1.2kg chicken in the fridge, ready to be cooked and eaten, when she went to work that afternoon.

I came back home after picking up my lil boy from day care and thought of what I was gonna cook. So I went through this recipe book called 'Stew'. You can see it on www.acpbooks.com.au. As I went through the pages, I came to 'Coconut Chicken Masala' and thought I was gonna try that. And try I did. And as I was busy going through the steps, and while the chicken was already in the pot, I couldn't find the tomato paste, so had to rush to the shops - thank God our shops here close late and they are very near. I came back with the paste and added it in.

I then added the coconut cream and cornflour mixture, and I saw the chicken pieces looking really good. Beause we have two groups of people (those that like chillies and those that can't stand it), I put some into one lil pot and added the fresh coriander and chillies into that pot.

I called on the girls to clear the table and told them dinner was served.

And I was showered with praises from all angles.

So, phambili lecurry. Pamberi necurry. Forward with curries.
